The plates in the exchanger provide a large surface area on which the heat transfer process can take place, which significantly increases the rate at which temperature change takes place. Unlike plate type exchangers, scraped surface models do not allow liquid to linger on their heating surfaces. Instead, a continual scraping action removes the liquid as it is heated, minimizing build-up by allowing fresh liquid to flow over the heating surfaces. Scraped surface heat exchangers work well on viscous products, or those where a degree of cooling (or crystallization) is required as part of the processing operation.
